Update OIDC claim mapping table to reflect the current state

Summary

As discussed in #1074 (comment), I am going to update the OIDC claim mapping table to reflect the current working mapping in production.

The changes in this PR are follows:

• Update Buildkite column
  • Remove the unused build_commit and build_branch claims
    The PR is still in draft and not yet deployed Update Buildkite issuer to include some of the new certificate extensions #1307
  • Change ?? to N/A
  • Add link to the official documentation about the OIDC claims
• Remove CircleCI column
  The issue is still open and not yet implemented Add support for CircleCI tokens #591
• Update GitLab column
  • Remove WIP remarks
    The item has been implemented and closed already https://gitlab.com/gitlab-org/gitlab/-/issues/404722
  • Update incorrect values of Build Signer URI, Source Repository Ref, Build Config URI
• General changes
  • Add double quotes on literal strings
