Part 3.1

Added fixes to the readme.md description of this project and got the sbt integration of jextract working. Futher, xdg-shell-unstable-v6-protocol.h was removed from the repository and instead is now generated by sbt at compile time using the wayland-scanner utility and the protocol.xml file.
