docs: add support documentation for DataPlane Signaling #1104

WHAT

This PR adds supporting documentation regarding the Tractus-X DataPlane Signaling Extensions. It details data flows and various
possibilities to trigger the token refresh.

WHY

documentation

FURTHER NOTES

List other areas of code that have changed but are not necessarily linked to the main feature. This could be method signature changes, package declarations, bugs that were encountered and were fixed inline, etc.

the failing test will be fixed in a subsequent PR. This one is just documentation.
