updating to 3.7 seems to work

Why not 3.11, as this is the lastest stable Python version available in GitHub action?

well, I dont know much about Python, just wanted something that worked.. without breaking too much

Don't worry, I was thinking that the (latest) Ubuntu in the GH Action is limited with regard to some python versions.
I think, we are fine with the actual version as long it works.
