Hi Team,

I am trying to enable metrics to observe the heath of Kube-Vip in Grafna.

append prometheus_server environment variable to "env" values to start exposing metrics:

env:
  (.....)
  prometheus_server: ":2112" # or another port

Furthermore, I created a PR #42 to enable PodMonitor in order to Promethus collect this metrics automatically.
