Chicken Quesadilla

Original Recipe

Fairly straightforward quesadilla recipe; heavy on the seasonings.

Ingredients

  • 2 Boneless, skinless chicken breast
  • 2 cups of grated monteray jack cheese
  • 1 1/2 tbsp chili powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 2 tsp oregano
  • 1/4 tsp black pepper
  • 1 tbsp kosher salt
  • 1 tbsp olive oil
  • 1 tbsp butter

Cooking Instructions

Cooking the chicken

  • Mix all the seasonings together in a large bowl.
  • Cut chicken breast into small, bite-size chunks.
  • Coat the chicken with the spices
  • Heat olive oil and melt butter together in a pan on medium heat.
  • Cook seasoned chicken in pan for 7-9 minutes, until cooked.

Making the Quesadillas

  • Lightly coat one side of a tortilla with olive oil.
  • Add some cheese to half of non-oiled side of tortilla.
  • Add some chicken on top of cheese.
  • Cover with more cheese.
  • Heat skillet or ribbed pan over medium heat.
  • Cook quesadilla over skillet. Flip after 2-3 minutes.
