Fairly straightforward quesadilla recipe; heavy on the seasonings.
- 2 Boneless, skinless chicken breast
- 2 cups of grated monteray jack cheese
- 1 1/2 tbsp chili powder
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika
- 2 tsp oregano
- 1/4 tsp black pepper
- 1 tbsp kosher salt
- 1 tbsp olive oil
- 1 tbsp butter
- Mix all the seasonings together in a large bowl.
- Cut chicken breast into small, bite-size chunks.
- Coat the chicken with the spices
- Heat olive oil and melt butter together in a pan on medium heat.
- Cook seasoned chicken in pan for 7-9 minutes, until cooked.
- Lightly coat one side of a tortilla with olive oil.
- Add some cheese to half of non-oiled side of tortilla.
- Add some chicken on top of cheese.
- Cover with more cheese.
- Heat skillet or ribbed pan over medium heat.
- Cook quesadilla over skillet. Flip after 2-3 minutes.
