Where can I find the docs/instruction for choosing wich cam will be displayed on birdseye?

Just use the birdseye key at the camera level.
Look at the test implementation:
https://github.com/blakeblackshear/frigate/blob/master/frigate/test/test_config.py#L84

birdseye:
  enabled: True
  mode: continuous

cameras:
  back:
    birdseye:
      enabled: False
