adapt-contrib-assessment: default question reset type is 'soft' for AAT

This seems like an unusual choice for the default - in both the example.json and the 'out of the box' framework content it's set to 'hard' (i.e. question component completion resets if the assessment is reset/retried).

Change default to 'hard'?
