Dynamically generate connection information options from connected post content?

This may be possible already, so please forgive me if it is.

What I'm looking for is something like default_cb for the values argument (vaules_cb?).

The idea is that when I'm setting up a connection information select box (or checkboxes), I could build a list of options from, in my particular case, the connected post's custom fields.
